Polenta

The trick to making a great polenta is to cover the pot and let it boil away making sure every now and then to stir and scrape the bottom it takes a little time to cook but the results are worth it. If serving immediately add extra cheese for a creamier polenta

The trick to making a great polenta is to cover the pot and let it boil away making sure every now and then to stir and scrape the bottom it takes a little time to cook but the results are worth it. If serving immediately add extra cheese for a creamier polenta

  • 1 cup polenta (ground cornmeal)
  • 5 cups water
  • 2 tbs butter
  • salt and ground pepper to taste
  • 1/2 cup parmesan cheese (optional)
  1. Boil water in a medium sauce pot. Pour the polenta slowly using a whisk mix until there are no lumps about two minutes.

    Reduce heat and simmer covered, and stir occasionally every 5 to 10 minutes, making sure you scrape the bottom so it doesn’t stick. Cook for about 30-40 minutes, when the polenta comes to smooth and creamy consistency. Season with salt and pepper add butter and cheese if using.
